Mitten im Skigebiet Adelboden findet sich eine Berghütte, die es in sich hat. Die Abendkarte und die Hütte waren so einladend, dass wir gleich für den Abend einen Tisch reserviert haben. Auf einem Holzkohlegrill, der über dem Kamin in der Stube eigens installiert wurde, bereitet Philippe Oester Köstlichkeiten aus der heimischen Bergwelt zu.

Hierbei lebt er das Motto, nur regionale Produkte zu verwenden und selber herzustellen. So gibt’s zu Beginn selbstgemachte Butter, das Cordon Bleu wird mit eigenem Almkäse und eigenem Schinken gefüllt. Auch Reh, Hirsch oder Gams kommen aus den einheimischen Jagdgründen. Ab 2 Personen kann man einen Reh- oder Gamsrücken bestellen, der samt Rückenknochen gegrillt wird und danach sauber filletiert auf einem Holzbrett zart rosa serviert wird.

Uns hat es so gut gefallen dass wir gleich zweimal da waren, einmal zum Reh- und danach zum Gamsrücken. Ganz selten gibt’s auch Stücke, die eigentlich die Jäger am liebsten selber verspeisen und daher selten in einem Restaurant auf der Speisekarte stehen. So kamen wir in den Genuss erstmals Gamsleber zu kosten. Kein Vergleich zu der sonst bekannten Kalbsleber! Fester in der Konsistenz, aromatischer im Geschmack - kein Wunder, wenn man bedenkt was und wo die Gams den ganzen lieben Sommer lang so an Gräsern etc. futtert. Hier schmeckt man die Natur. Ebenso der Gamsrücken, der leicht kräftiger als das Reh mundet aber fast noch zarter ist.
